Buttercream is an extremely simple thing to make and an absolute essential for cake decorating enthusiasts. However, to ensure that you can create beautiful cakes with buttercream, you need to make sure it’s the right consistency, so we’ve put together this little recipe to help you nail it every time.

You will need:
- 500g Sugar & Crumbs Natural Flavoured Icing Sugar (any of your choice)
- 250g softened unsalted butter
- 1 tablespoon cooled boiled water
- Food colouring (optional)
Bring your unsalted butter to room temperature so that it is softened, then use an electric mixer or whisk to beat the butter until soft and fluffy.
Add the Natural Flavoured Icing Sugar to the bowl. If you want a less intense flavour, you can dilute the Natural Flavoured Icing Sugar by using 250g of normal icing sugar and 250g of the flavoured. ‘Chop’ the mixture with a spatula before using your electric mixer.
Using your electric mixer or whisk, start beating the mixture slowly in small bursts, just to ensure you don’t get a puff cloud of icing sugar dust! Do this until it begins to incorporate, then increase the speed of your mixer.
Whilst mixing, add one tablespoon of cooled boiled water to loosen the buttercream. Mix it together for about 30 seconds until your buttercream is light and fluffy.
If you want coloured icing, add in a few drops of food colouring and mix to combine. Then pop into a piping bag and have some cake decorating fun!
